Fast-healthy concept restaurant Blueroot is opening its flagship location in Birmingham’s Pepper Place today.
The restaurant, specializing in salads and bowls with various ingredients, made its debut at Pepper Place Market in 2019, then opened a pop-up location in Mountain Brook, before opening the brick-and-mortar location today.
“The Birmingham entrepreneurial community has been unbelievably welcoming and supportive in mentoring me and helping bring this dream to life,” said owner Jennifer Ryan. “We are thrilled to open our doors and fill a food gap of accessible and healthy food to the community, especially for those on the move.”
Ryan created Blueroot to fill a gap for healthy yet convenient foods with a menu that’s describes as “sitting playfully on the line between health nut and foodie.”
James Beard award-winner Robin Bashinsky is chef for Blueroot, focusing on locally sourced foods.
